Fire up the BBQ and enjoy this hearty, juicy gluten free flame grilled burger made from scratch using only 7 ingredients.  This delicious dish comes without troublesome wheat, egg or bread crumb binders.  Your taste buds and wasteline will be equally delighted!

Ingredients – Serves 4

8 large Portello Mushrooms (about 800g) stems trimmed

2 Zucchini thickly sliced

1 Large Sweet Potato thickly sliced

1 Tablespoon of Moroccan Spice

1 1/2 Tablespoon of Olive Oil

75g Baby Rocket Leaves

40g Walnuts roughly chopped

 Method

Preheat BBQ grill

lightly brush olive oil on both sides of mushrooms

Mix Moroccan Spice with remaining olive oil.  Brush spiced oil mixture on both sides of  sliced Zucchini and Sweet Potatos

Grill Mushrooms, Sweet Potato’s and Zucchini till cooked

To assemble the burgers, place four mushroom buns cup side up.  Evenly place rocket, chopped Walnuts, grilled Zucchini, grilled Sweet Potato.  Top burger with remaining grilled mushroom ‘bun’

Insert skweker and serve.  Garnish with rocket and chopped walnuts if desired.
