If you’re looking for a quick and easy meal, try making a delicious curry using brown lentils. The best part is that you don’t even need to soak the lentils beforehand.  This saves you time and makes the recipe even more convenient.

This curry is full of flavor and will surely satisfy your taste buds. It’s the perfect dish for a midweek meal when you want something tasty but don’t have a lot of time to spare. Ingredients

1 tablespoon of oil

1 teaspoon of cumin seeds then add

1 medium diced onion

150grams of tin tomatoes

2 tablespoons of curry paste

1 400gram tin of cooked brown lentils

2 tablespoons of brown sugar

1 teaspoon of garam masala

Method

1) In a saucepan on medium heat add oil, cumin seeds and diced onions & cook until transparent and slightly brown.

2) Add curry paste, lightly simmer for 2-3 minutes to release flavours.

3)Add tin tomatoes, sugar and garam masala, simmer and reduce to a thick sauce.

4) Drain & rinse the lentils. Add to the sauce.   

5) Salt & white pepper to taste.  Serve on a bed of mini potato cakes/scallops.
