Dozen air fried mini potato cakes
150g sliced grilled mushrooms
1 tablespoon of olive oil
1 clove of crushed garlic
Balsamic vinegar glaze
Coconut Yoghurt
Chopped Parsley
Method
1. Cook mini potato cakes in the air fryer until golden brown as per instructions on the pack.
2. Heat olive oil and pan fry the sliced mushooms with garlic
3. Layer cooked mini potato cakes between layers of fried mushroom
4. Garnish with balsamic vinegar glaze, coconut yoghurt & chopped parsley
