Declutter the nachos mess with this recreated, deconstructed, mini potato cakes version of nachos. Oh so simple and oh so delicious. A meal all on it’s own. Now you can skip the entree as this will destroy any trace of hunger.
For Spice Mix
2 tablespoons chilli powder
1 1/2 teaspoon of salt
1 teaspoon of garlic powder
1 teaspoon of onion powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon black pepper
1/2 teaspoon cayenne pepper
For the Bean Dip mix
1 teaspoon vegetable oil
1/4 cup red onion
1 400g tin of black beans
1 400g tin of refried beans
For the Guacamole
2 large avocados pitted & mashed
½ small lime juice or to taste
¼ red onion diced
1 garlic clove minced
¼ teaspoon of ground cumin
1 tablespoon of freshly chopped corriander
Salt and pepper
For the Nachos
1 Bag of Why Meat Co Mini Potato Cakes
400g diced tomato
200ml tub of coconut sour cream
Method
Prepare Guacamole
Prepare diced Tomato
Prepare spice mix
Bake 1 pack of Why Meat Co Mini Potato cakes in the air fryer or oven.
In saucepan lightly fry onion in oil, add spice mix, add black beans and mix until well combined. Add refried beans combine and heat through on low.
In a large bowl, arrange mini potato cakes, bean dip mix, diced tomato, guacamole and coconut sour cream.
