Butter beans are large beans with a subtle buttery taste and creamy texture. They absorb the rich notes that permeate throughout this smoky dish.
Ingredients
- 400g x 2 cans of butter beans, rinsed, drained
- 6 Whole peeled garlic
- 400g Diced Tomato
- 1 Large Zucchini Diced
- 2 Tsp of Massel beef stock powder
- 2 Tsp of smoked paprika
- 2 Tbs of tomato paste
- ¼ cup virgin olive oil
- 2 tbs of rice syrup or maple syrup
- Mozzarella cheese
- (optional) 100g of feta
Method
- Preheat the oven to 220°C. Toss the beans, garlic, tomatoes, paprika, tomato paste, zucchini, syrup, into large baking dish.
2.Bake for 30 minutes or until tomatoes start to collapse. Stir, breaking up tomatoes slightly. Add Cheese & cook for a further 10 minutes. Serve
