INGREDIENTS – Serves 2
4 washed potatoes
1 cup of frozen peas
1 tablespoon olive oil
¼ bunch of mint
Himalayan salt to taste
pepitas seeds (Optional)
1 Wash & dry potatoes, cut into cubes and place in saucepan of cold water
2 Place potato on stove and bring to boil, simmer till cooked through
3 Drain potatoes, cool under running cold water and strain
4 Cook peas in a saucepan with hot water cook till peas start to float
5 Drain peas, cool under running cold water and strain
6 chop mint
7 Combine potato, peas, chopped mint, olive oil and Himalayan salt together and mix in a bowl until potatoes are evenly coated.
