Sure to satisfy, transform the humble potato into a mouth watering jacket potato treat.  Best of all potatoes are often referred to as a superfood, as they are packed with vitamins and minerals including potassium, folate, vitamins C and B6.  Be sure to eat the skin as well as it contains the highest concentration of vitamins & minerals.   

 

  1. Preheat oven to 200°C (180°C fan) prick potato skin a few times and cook 1 medium washed baking potato for 50min-1hr until cooked through.
  2. To make the coleslaw, grate 1 small carrot, thinly slice a small chunk of white & Red cabbage and slice 1 celery stick. Put into a bowl
  3. When the potato is cooked, cut a cross in the top, add tablespoon of plant-based sour cream, season and spoon the coleslaw on top.
  4. Fancier version add a handful of salted peanut, 1/2 tsp English mustard, 1/2 tsp fennel seeds and a squeeze of lemon juice and mix with 1/2 cup of plant-based sour cream and add to the coleslaw vegetables.  
  5.  Add good grinding of black pepper and salt to taste.
