Pulled jackfruit canapes are perfect for a game day party and is sure to satisfy all party guests whether vegan or not.  In this easy recipe, unlike the meat alternative, the pulled jackfruit is ready within the hour.. The brave can serve with a homemade barbecue sauce or if convience is what you seek use your favorite purchased barbecue sauce.

INGREDIENTS

1 1/2 tablespoons olive oil

1kg or 2 (500g) cans of young green jackfruit in brine

1 small yellow onion, sliced

3 cloves garlic, minced

1 teaspoon salt

1 teaspoon pepper spicy or 1/2 teaspoon mild spice

1 teaspoon chili powder hot – 1/2 teaspoon mild

1 teaspoon paprika

1 teaspoons cumin

1 tablespoon smoked paprika or liquid smoke

1 cup vegetable broth

1 cup barbecue sauce

 

DIRECTIONS

  1. Drain and rinse the jackfruit, then cut into smaller pieces
  2. On medium heat place saucepan on stove.  Add olive oil, onion and cook for until translucent.
  3. Add the garlic, salt, and pepper, and cook for 2 minutes.  Add the jackfruit, spices and vegetable broth.
  4. Cover and cook for 15 minutes, until the jackfruit is soft enough to be pulled apart.
  5. Preheat the oven to 200ºC. Line baking try with baking sheet paper.
  6. With two large forks pull apart jackfruit until shredded.
  7. Pour jackfruit onto baking tray and spread as an even layer.
  8. Bake for 25 minutes or until the jackfruit is slightly browned and crispy.
  9. Serve on pre-cooked mini potato cakes and top with BBQ sauce
  10. (Optional) serve on a bed of coleslaw 😉
