The best thing about the mini version of a potato cake/scallop is you can do so much more with them, than their larger relative, a normal potato cake/scallop.  The mini’s are a perfect size to fit into a wrap.  Who knew it would be so filling and delicious.

All you need is;

A wrap

small handful Mixed Salad or Lettuce

1/2 Tomoato or 1/4 Cumcumber thinly sliced

1 Tablespoon Grated Carrot

4 Air Fried Crispy Golden Mini Potato Cakes

1 Tablespoon Coconut Sour Cream

Salt & Pepper to taste
